Ontkieming is het proces waarbij een zaad uit zijn rustperiode komt en actieve groei begint, waarbij een kiemwortel (embryonale wortel) en een scheut worden geproduceerd. Het wordt veroorzaakt door de combinatie van voldoende vocht, de juiste temperatuur en, bij sommige soorten, licht of duisternis. Bij hydroponische teelt worden zaden meestal ontkiemd in een vermeerderingsmedium (steenwolblokjes, Rapid Rooter plugs of vochtige papieren handdoeken) voordat ze naar het belangrijkste teeltsysteem worden overgebracht zodra de zaailing is gevestigd.
